Collected by hanging a container (pūpū kaleve) from the cut end of a coconut palm spathe (taume). Men usually climb the tree twice a day, in the morning and evening, to replace the container. This work is traditionally done by men. The collected sap is used in various dishes. After being collected, it naturally ferments over time, producing carbon dioxide and alcohol.
